Hummus

2 cups cooked chickpeas
3 tablespoons lemon juice
2 tablespoons tahini (made from sesame seeds, olive oil, and spices; available from many supermarkets and specialty markets)
1 head of roasted garlic
2 small garlic cloves, minced or pressed through garlic press
1 teaspoon sea salt
1/4 teaspoon ground cumin
Pinch of cayenne
Olive oil
Fresh parsley, chopped
Paprika
- Place chickpeas, lemon juice, tahini, roasted garlic, garlic, sea salt, cumin and cayenne in a food processor. Process mixture and, with machine running, pour olive oil into the feed tube until hummus is smooth and creamy.
- Remove from food processor and garnish with parsley, paprika and drizzled olive oil.
